get linux on a usb stick and boot from it instead? I recall looking at postgres version in macports back in 2003 and going debian. I also knew that a company selling a portable hd which could not exchange files (the ipod) had no future. I was right (in a very user centric way, though)
I don't know what kind of package manager you are using, but on Debian there is a configuration option whether to install "recommended" packages, or just actually "required" packages. It wouldn't surprise me at all if gnucash depended on some Gnome components, and that they recommended the rest of Gnome.
Setting the options to just install "required" packages will probably reduce the amount of unneeded crap that gets pulled in. I remember one package that actually installed about a gigabyte of stuff I did not need. I think it was asciidoc that installed the entire TeX ecosystem in case I were to want to generate TeX documents from asciidoc ones. As it happened, I didn't.

Not if the person is stuck with dyscalculia, like I am.
Also, if you're voting with a Scantron/Optical-Mark-Recognition sheet, you might as well use an e-voting system that produces a paper trail (e.g. the one my county uses), as security for OMR systems is just as poor. (Among other things, keeping the OMR system offline doesn't help much if the county programs or accesses its memory card using a standard Win/Mac system connected to the network.) Despite that it runs on the Mac it's an X11 application. I use quartz-wm to give all the window title bars so I can drag them around.
