I had a professor who avoided the issue by replacing the joke's ethnic target with that of some long dead civilization. His favorite ones started out: "So these two Carthaginians - Sven and Ole - were out hunting..."

Racism jokes are only funny if they avoid mentioning any actual race by using variables such as ${race} or ${ethnicity} in the body of the joke.
Otherwise, no racism jokes.
People today are educated enough to repeat what they are taught but not to question what they are taught.
