Arthur T Knackerbracket has found the following story:
Experts predict that an upcoming ruling from the EU's European Food Safety Authority, in which the sale of insect-based food products will be liberalized, could see them finally hit the mainstream.
Accordingly, interest in mass rearing systems and technologies is growing. Within the SCALIBUR project, researchers are developing a new circular economy concept whereby flies are reared on food waste from restaurants, before being processed into food, feed and other products.
[...] Of the 90 million tons of food wasted each year in the EU, about 10 comes from food services, so called HORECA (hotels, restaurants, and cafés). This is a huge amount of still quite high-value organic substances which is going to waste. The black soldier fly (BSF) naturally feeds on these kinds of organic substrates.
UNIMORE has teamed up with Italian company Kour Energy to develop a start-to-end insect rearing process to obtain valuable products (protein, lipids and chitin) in a very efficient way, using high-tech chemical fractionation. We are merging biological knowledge for the best rearing practices, with chemical expertise for a high-yield extraction of products, and design and engineering practices to develop two pilot plants able to perform the whole transformation from waste to valuable materials.
[...] In the EU it is currently not allowed to use anything that is defined as 'waste' (including, by extension, insects reared on food waste) as feed for animals.
We expect the results of SCALIBUR will prove that it is possible to use insect larvae for effective and safe biowaste conversion, and then show the relevance of the technology for industrial scale use.

The end product would be some sort of powder or liquid which could be used as an ingredient. Every protein of the same structure functions the same no matter where it came from. On an even smaller scale, the atoms in every meal you've ever had were part of bugs at one point. Every glass of water has H2O molecules that were pissed out by some animal not too long ago.
Getting weirded out by these facts is just another remnant of essentialism. Actually it might be even less philosophically defensible than that; it reminds me of homeopathic quackery where water "remembers" the properties of active ingredients that were dissolved in it even after being diluted orders of magnitude below detectable thresholds.

IDK about idealistic situations, but the prawn farms of SouthEast Asia convert something like 15lbs of low quality (read: perfectly edible, normally consumed by the poor) fish into 1lb of farmed prawns for sale to Western markets.

That's an interesting perspective. It seemed more to me that cries for lockdown have been coming from the sheltered young; the rest of us have been through more public health crises like AIDS, Hanta Virus, SARS, Bird Flu, MERS, West Nile Virus, Zika Virus, etc. and know it's probably not the end of the world. Even the risible "murder hornets" scare they were trying to piggyback on Wuhan coronavirus a few weeks back is not new. In the 80's it was, "Killer Bees are Spreading North from Mexico and are Going to Kill YOU!!!!!!"
The legacy media has a strong financial incentive to hyperventilate and get you to freak out, too.

In the US right now massive amounts of food are being trashed because the hotels and restaurants can't use it. Is this not happening in Europe?
Some of it is being sold off through other channels. Shipping cost is prohibitive on 50lb bags of flour though, better look for the 25lb ones instead.

If people want to eat bugs that's fine with me. But I don't want to buy food that contains these products. So I wonder if they'll be clear about that on the labeling, but I'm quite suspicious that the EU will find a way to hide the truth.
