Relatedly (and only from memory -- sorry no links), I recall reading that the same person taking the same test but on different days (unsure of time separation) can also vary just as much.
Check mensa's site. They list two different professionally administered tests last I looked and give different minimum scores for each for this reason. You can follow the rabbit hole as far as you like from there.
