An elderly friend died last year and among other things I inherited a couple of bottles of Creme de Menthe. For anyone unfamiliar, it's bright green and very minty -- 60 proof / 30% alcohol by volume. I'm not a regular drinker, and I am one of those weirdos that believes in waste-not, want-not, so I felt obligated to find a way to (slowly) consume it. My eventual choice was to pour a shot or two over a bowl of chocolate ice cream -- not bad, compare to mint chocolate-chip ice cream, with a little kick.
Any other suggestions?

Yeah it is an odd article, but one posted by a frequent visitor or member of this very dysfunctional Soylent 'Family'. Why would people take the time to voice their opposition to the article and NOT make a suggestion on what to do with Crème De Menthe ? As someone who has an Uncle that owns a bar, I'd 'donate' the stuff to the bar and go back to slinging darts, but that is just me. YMMV of course.

Ingredients -
25 chocolate sandwich cookies
115 g butter, melted (1/2 cup)
205 g marshmallow creme (2 cups)
60 ml creme de menthe liqueur (1/4 cup)
475 ml whipping cream (2 cups)
Directions -
1 Crush cookies and set aside 1/4 cup of crumbs. Place remaining crumbs in a medium bowl and mix in melted butter. Press mixture firmly into bottom and sides of a 9 inch springform pan.
2 In a large mixing bowl, whip together marshmallow creme and creme de menthe until smooth. In a separate bowl, whip cream until soft peaks form, then fold into marshmallow mixture. Pour mixture into pan and sprinkle reserved cookie crumbs on top. Freeze at least 2 hours, until firm. Remove from freezer 20 minutes before serving to soften slightly.

I have memories of eating something like this as a child, though I seem to remember it setting in the fridge rather than the freezer. Whatever the differences, my mom probably used less creme de menthe, or it evaporated somehow before being fed to kids. We called it grasshopper pie.
